Recipe Intensity & Difficulty Guide
Intensity Level: Moderate

Why? While the ingredients and assembly are straightforward, the “intensity” comes from the technique of working with puff pastry and the twisting process. It requires a steady hand and a bit of patience to ensure the pastry is rolled evenly and the twists are neat.

Skill Level Required:

Puff Pastry Handling: Puff pastry must be kept cold. Working with it at room temperature is the most common challenge. If it becomes too soft, the butter layers can melt, and you’ll lose that signature flaky texture. This recipe will teach you how to manage this.

Even Rolling: Rolling the pastry to a perfect rectangle is key for even cooking and consistent twists.

The Twist: The “twist” itself is simple to execute but can feel a little delicate. The goal is to create a tight, even rope that will hold its shape during baking.

Ingredients
For the Bread:
1 sheet (about 17.3 oz / 490g) all-butter puff pastry, thawed but COLD

Chef’s Note: Quality matters! Look for all-butter puff pastry for the best flavor and flakiness. Keep it in the refrigerator until you are ready to use it.

1 large egg + 1 tablespoon water (for egg wash)

Flour, for dusting

For the Filling (Classic Spinach & Artichoke):
1 cup (240ml) frozen chopped spinach, thawed and squeezed completely dry

Crucial Step: Removing as much water as possible from the spinach is vital. Excess moisture will make the filling watery and the pastry soggy.

1 cup (240ml) canned artichoke hearts, drained and finely chopped

4 oz (113g) cream cheese, softened

1/2 cup (50g) grated Parmesan cheese

1/2 cup (50g) shredded mozzarella cheese

1 clove garlic, minced

1/4 teaspoon salt

1/4 teaspoon black pepper

Pinch of red pepper flakes (optional, for a little heat)

Optional Filling Variations:
Italian Sausage & Peppers: 1/2 lb cooked and crumbled Italian sausage, 1/2 cup roasted red peppers (drained and chopped), 1 cup shredded provolone, and 1/4 cup grated Parmesan.

Pesto & Sun-Dried Tomato: 1/2 cup pesto, 1/2 cup chopped sun-dried tomatoes (in oil, drained), 1 1/2 cups shredded mozzarella.

Ham & Swiss: 1 cup diced cooked ham, 1 1/2 cups shredded Swiss cheese, 1 tablespoon Dijon mustard.

Equipment Needed
Rolling Pin

Large sharp knife or pizza cutter

Baking sheet

Parchment paper

Pastry brush

Small bowl (for egg wash)

Large mixing bowl

Step-by-Step Instructions
1. Preheat and Prepare: Preheat your oven to 400°F (200°C) . Line a large baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze.

2. Make the Filling: In a large mixing bowl, combine the completely dry spinach, chopped artichoke hearts, softened cream cheese, Parmesan, mozzarella, garlic, salt, and pepper. Mix until all the ingredients are thoroughly combined and form a cohesive, slightly thick paste. Taste and adjust seasoning if needed. Set aside.

3. Roll Out the Puff Pastry: Lightly dust your work surface with flour. Unfold your cold sheet of puff pastry. If it’s already a perfect rectangle, great! If not, use your rolling pin to gently roll it out to approximately a 12×16-inch (30×40 cm) rectangle. It’s important to roll in one direction, then turn the dough 90 degrees and roll again to maintain the shape.

4. Score the Pastry (The “How-To” for Twisting): This is the most crucial step for the twisting technique. Imagine the rectangle is divided into three equal horizontal strips (top, middle, bottom).

On the top and bottom strips, use a pizza cutter or a sharp knife to make diagonal cuts, approximately 1 to 1.5 inches apart. These cuts should go from the outer edge of the pastry inwards, stopping when you reach the border of the middle strip. This will create a fringe of “strips” along the top and bottom edges. You should have an equal number of cuts on the top and bottom.

5. Add the Filling: Spoon the filling in a straight, even line down the center of the middle strip (the uncut portion) of the pastry.

6. Begin the Twist: Starting at one end, take the first strip from the top and the first strip from the bottom. Gently fold them over the filling, crossing them over each other in a slight “X” pattern, pinching them together slightly at the center.

7. Continue the Pattern: Continue this process, alternating the top and bottom strips across the entire length of the pastry. Each strip should overlap the previous one slightly, creating a braided or twisted appearance. When you reach the end, tuck the final strips under the loaf to seal it.

8. Egg Wash and Bake: In a small bowl, beat the egg with 1 tablespoon of water to create an egg wash. Using a pastry brush, gently brush the entire top surface of the twisted bread with the egg wash. This will give it a beautiful, glossy, golden-brown finish.
Transfer the baking sheet to the preheated oven. Bake for 25-30 minutes, or until the pastry is puffed up and deeply golden brown. Rotate the baking sheet halfway through baking for even browning.

9. Cool and Serve: Remove the bread from the oven and let it cool on the baking sheet for 5-10 minutes. This allows the filling to set slightly, making it easier to slice. Transfer to a cutting board, slice, and serve warm. It’s best enjoyed fresh from the oven!
