Ingredients
For the Creamy Cilantro-Lime Sauce

Instructions
Part 1: The Sauce (5 Minutes)

In a small bowl or a food processor, combine the Greek yogurt, cilantro, minced garlic, lime juice, and olive oil.
If using a bowl, whisk vigorously until smooth and pale green. If using a food processor, pulse until fully combined.
Season with salt and pepper. Taste it—you want it to be bright and zesty. Set aside. (Reserve 2 tablespoons of this sauce for the chickpeas).
Part 2: The “Bacon” & Chickpeas (7 Minutes)

Stir in the 2 tablespoons of reserved cilantro-lime sauce and the ¼ teaspoon smoked paprika. Mix until combined.
Part 3: Assembly (3 Minutes)

Warm the Tortillas: For pliability, warm your tortillas in a dry skillet for 10 seconds per side, or microwave them wrapped in a damp paper towel for 15 seconds.
