Ingredients
Here is what you need to make this magic happen.
For the Sauce:
-
¼ cup Coconut Aminos (or low-sodium soy sauce/tamari)
-
1 tablespoon Toasted Sesame Oil
-
1 teaspoon Rice Vinegar
-
1 teaspoon Fresh Ginger, grated (or ½ tsp ground ginger)
-
2 cloves Garlic, minced
-
½ teaspoon Red Pepper Flakes (optional, for heat)
-
1 tablespoon Arrowroot Powder (or cornstarch, optional for a thicker sauce)
For the Bowl:
-
1 tablespoon Avocado Oil (or olive oil)
-
1.5 lbs (680g) Lean Ground Pork (90/10 or leaner. Ground turkey or chicken work great too)
-
1 medium Yellow Onion, diced
-
1 bag (16 oz / 450g) Coleslaw Mix (shredded green cabbage and carrots) – This is your shortcut!
-
3 Green Onions, sliced (white and green parts separated)
-
Salt and Black Pepper, to taste
For Serving (Optional but recommended):
-
Sesame Seeds
-
Sriracha or Chili Garlic Sauce
Equipment Needed
-
Large Skillet or Wok (12-inch recommended)
-
Small Mixing Bowl
-
Whisk
-
Wooden Spoon or Spatula
Instructions
Follow these steps for a perfect bowl every time.
Step 1: Prepare the Sauce
In your small mixing bowl, whisk together the Coconut Aminos, Sesame Oil, Rice Vinegar, grated Ginger, minced Garlic, and Red Pepper Flakes (if using). If you prefer a thicker, glaze-like sauce, whisk in the arrowroot powder now. Set this bowl aside. This is where all the deep, savory flavor lives.
Step 2: Brown the Meat
Place your large skillet over Medium-High Heat. Add the Avocado oil and let it heat until it shimmers. Add the ground pork to the pan. Break it up with your spatula and let it cook, undisturbed for 2-3 minutes to get a nice sear. Then, continue to cook, stirring occasionally, until the pork is completely browned and cooked through (about 5-7 minutes). If there is a lot of excess fat, carefully drain it off, but leave a tablespoon or two in the pan for flavor.
Step 3: Add the Aromatics
Reduce the heat to Medium. Add the diced yellow onion and the white parts of your sliced green onions to the skillet with the pork. Cook for 2-3 minutes, stirring frequently, until the onion becomes translucent and fragrant. Season with a pinch of salt and pepper.
Step 4: The Cabbage Miracle
This is the fastest part. Add the entire bag of coleslaw mix (or your freshly shredded cabbage and carrots) to the skillet. It will look like a mountain of vegetables that won’t possibly fit. Don’t panic! Use tongs or your spatula to toss the cabbage with the meat mixture. It will begin to wilt immediately.
Step 5: The Simmer
Pour the prepared sauce over the cabbage and meat mixture. Stir well to ensure everything is coated. Cook for 5-7 minutes, stirring occasionally, until the cabbage has wilted down significantly but still retains a slight crunch (we aren’t making sauerkraut!). The vegetables should be tender-crisp.
Step 6: Finish and Garnish
Turn off the heat. Stir in the green parts of your sliced green onions. This adds a fresh, bright flavor. Taste the mixture and adjust seasoning with salt and pepper if necessary.
Serving Suggestions
Scoop a generous portion into a bowl. For an extra touch, sprinkle with sesame seeds and drizzle with a little sriracha or chili garlic sauce for a spicy kick.
Notes on “Intensity” (Skill Level & Effort)
Intensity Level: Low
This recipe is perfect for beginner cooks or anyone short on time. There is no complicated technique—no knife skills required (thanks to the bagged slaw mix), no deep-frying, and no precise temperature control. The main “challenge” is not over-stirring the meat to ensure a good sear, but even that is forgiving. The active “intensity” is low, making it a 10/10 for a stress-free dinner.
Storage and Reheating
This recipe is a “meal prep hero.” It tastes even better the next day as the flavors meld.
-
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
-
Reheating: Reheat in a skillet over medium heat for 3-4 minutes, or microwave in 30-second intervals until hot.
