Instructions
Step 1: Cook the Beets

Rinse the beets thoroughly under cold water to remove any dirt. Do not peel them; leaving the skin on during cooking prevents the color from bleeding and helps retain nutrients.

Place the beets in a large pot and cover them with water. Bring to a boil, then reduce the heat to a simmer. Cook for about 30-45 minutes, or until they are fork-tender. The cooking time will depend on the size of your beets. Smaller beets will cook faster.

Step 2: Prepare the Brine

Step 3: Assemble and Pickle
