Instructions
Phase 1: The Dough (Active Time: 10 Minutes)
Whisk Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

Shape the Fries: Divide the dough in half. On a lightly floured surface, roll each half into a log approximately 8 inches long and 1 inch thick (the size of a thick breadstick). You want a rectangular-ish log; don’t worry about perfect rounds.
Chill: Wrap each log tightly in plastic wrap. Refrigerate for at least 1 hour, or up to 3 days. This step is non-negotiable—chilling prevents the cookies from spreading into flat puddles.
Phase 3: Baking (Intensity: Medium / Time: 14 Minutes)
