Intensity & Difficulty Guide
Skill Level: Easy (Beginner Friendly)
Active Time: 20 minutes (This is the time you are actively chopping, browning, and mixing).
Passive Time: 25 minutes (Baking time—you can relax and clean up).
Flavor Intensity: Bold & Zesty
Spice Level: Mild-Medium (Adjustable based on your taco seasoning and salsa).
Mess Factor: Low (Primarily uses one skillet and one pie plate).
Ingredients
For the Crust:
1 ½ cups (180g) crushed tortilla chips (or a 9-inch prepared pie crust for a quicker option)
4 tablespoons (60g) unsalted butter, melted
½ cup (50g) shredded cheddar cheese
For the Beef Filling:
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
2 pounds (900g) lean ground beef (90/10 recommended)
1 packet (1 oz/28g) taco seasoning (or 3 tablespoons homemade blend)
½ cup (120ml) water
1 (10 oz/280g) can diced tomatoes with green chilies (Rotel), undrained
1 cup (150g) frozen corn kernels (optional)
Salt and pepper to taste
For the Cheesy Topping:
1 cup (240g) sour cream (or plain Greek yogurt)
1 cup (240ml) salsa (mild, medium, or hot, depending on preference)
2 cups (200g) shredded Mexican blend cheese (or cheddar/jack)
2 large eggs, lightly beaten
For Topping (After Baking):
¼ cup fresh cilantro, chopped
½ cup cherry tomatoes, diced
½ cup shredded lettuce
Sliced jalapeños (optional)
Instructions
Step 1: Prepare the Crust
Preheat your oven to 375°F (190°C) . In a medium bowl, combine the crushed tortilla chips, melted butter, and ½ cup of cheddar cheese. Mix until the crumbs are evenly moistened. Press this mixture firmly into the bottom and up the sides of a 9-inch deep-dish pie plate. Set aside. (Note: If using a prepared pie crust, skip this step and place the crust in the pie plate.)
Step 2: Brown the Beef
Heat the olive oil in a large skillet over Medium-High Heat (Intensity: High) . Add the diced onion and sauté for 4-5 minutes until translucent. Add the minced garlic and cook for 1 minute until fragrant. Add the ground beef and break it apart with a wooden spoon. Cook for 8-10 minutes, until the beef is browned and no longer pink. Drain any excess fat from the skillet.
Step 3: Season the Filling
Reduce the heat to Medium (Intensity: Medium) . Sprinkle the taco seasoning over the beef and stir to coat. Add the ½ cup of water, the undrained can of diced tomatoes with green chilies, and the frozen corn (if using). Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the liquid to reduce slightly. Taste and adjust salt and pepper as needed.
Step 4: Assemble the Pie
Spread the seasoned beef mixture evenly over the prepared tortilla chip crust.
Step 5: Make the Cheesy Topping
In a separate medium bowl, whisk together the sour cream, salsa, shredded cheese, and the two beaten eggs until smooth. Carefully pour this mixture over the beef filling, spreading it to cover the entire surface.
Step 6: Bake
Place the pie on a baking sheet (to catch any potential overflow) and bake in the preheated oven for 25-30 minutes, or until the topping is set, puffed up, and golden brown around the edges. The center should be just slightly jiggly but firm.
Step 7: Rest and Serve
Remove the Beef Taco Pie from the oven and let it rest on a wire rack for 5-10 minutes. This is crucial for the layers to set so you get neat slices. Top with fresh cilantro, diced tomatoes, shredded lettuce, and jalapeños.
Step 8: Slice and Enjoy
Cut into 8 wedges and serve with extra salsa, sour cream, or guacamole on the side.
Chef’s Tips & Variations
Make it Keto/Low-Carb: Skip the tortilla chip crust entirely. Grease the pie plate generously and layer the beef directly into the dish. The topping will form a delightful crust on its own!
Add Veggies: Feel free to add a diced bell pepper or a can of black beans to the beef mixture for extra fiber and nutrition.
Spice it Up: For a hotter dish, use hot salsa and add a diced jalapeño to the beef mixture while cooking.
Make Ahead: You can assemble the entire pie (without baking) and cover it tightly with foil. Refrigerate for up to 24 hours. When ready to eat, add 10-15 minutes to the baking time since you are starting from a cold dish.
Storage & Reheating
Refrigerator: Store leftovers in an airtight container for up to 4 days.
Freezer: Wrap individual slices tightly in plastic wrap and then foil. Freeze for up to 3 months.
Reheating: For best results, reheat in the oven at 350°F (175°C) for 10-15 minutes, or microwave individual portions for 1-2 minutes.
