300g (10 oz) shortcut bacon, diced

1 large brown onion, finely diced

2 cups (200g) grated cheddar cheese, divided

1 cup (100g) grated mozzarella cheese

3 spring onions (scallions), thinly sliced (for garnish)

Method
Step 1: Prep & Cook the Bacon & Onion (Time: 15 minutes)

Preheat your oven to 180°C (350°F).

In a skillet over medium-high heat, cook the diced bacon until it begins to crisp. Add the finely diced onion and cook together until the onion is soft and translucent and the bacon is golden and crisp. This should take about 8-10 minutes. Remove from heat and drain on paper towels to remove excess grease. Set aside to cool slightly.

Step 2: Prepare the Cob Loaf (Time: 5 minutes)

Take your cob loaf and, using a sharp serrated bread knife, carefully cut a circular “lid” from the top, about 2-3 inches in diameter. Set the lid aside.

Gently hollow out the inside of the loaf, tearing the removed bread into generous bite-sized chunks. Be careful not to cut through the sides or bottom of the loaf; you want to leave a sturdy bread bowl about ¾-inch thick. Place the hollowed loaf and the bread chunks on a large baking tray.
