Ingredients
-
2 pounds sirloin steak, cut into 1-inch cubes (see Chef’s Tip)
-
1 teaspoon kosher salt
-
½ teaspoon black pepper
-
2 tablespoons olive oil or avocado oil
-
⅓ cup low-sodium soy sauce
-
⅓ cup honey (or pure maple syrup)
-
¼ cup low-sodium beef broth or water
-
2 tablespoons tomato paste
-
1 tablespoon rice vinegar (or apple cider vinegar)
-
6-8 large garlic cloves, minced (about 1 ½ tablespoons)
-
1 teaspoon grated fresh ginger (or ¼ teaspoon ground ginger)
-
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry, for thickening)
-
Sliced green onions and sesame seeds, for garnish
Instructions
1. Sear the Steak (Optional but Recommended):
Pat the steak bites completely dry with paper towels. Season generously with salt and pepper. Heat the oil in a large skillet over medium-high heat. Working in batches to avoid overcrowding, sear the steak for 60-90 seconds per side, just until a golden-brown crust forms. Transfer seared steak to the bowl of your slow cooker. This step locks in flavor but can be skipped for ultimate simplicity.
2. Make the Sauce & Slow Cook:
In a medium bowl, whisk together the soy sauce, honey, beef broth, tomato paste, rice vinegar, minced garlic, and grated ginger until smooth and well combined.
Pour the sauce mixture evenly over the steak bites in the slow cooker. Gently stir to ensure all pieces are coated.
3. Cook:
Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The steak is done when it is fork-tender. Low and slow is recommended for the most tender result.
4. Thicken the Sauce:
Once cooking is complete, if a thicker sauce is desired, carefully ladle about ½ cup of the hot cooking liquid from the slow cooker into a small bowl. Whisk in the cornstarch slurry until smooth. Pour this mixture back into the slow cooker and stir gently.
Cover and cook on HIGH for an additional 15-20 minutes, or until the sauce has thickened to a glossy, gravy-like consistency.
5. Serve:
Garnish the tender steak bites and rich sauce with thinly sliced green onions and a sprinkle of sesame seeds. Serve immediately over your chosen base.
Chef’s Tips & Variations
-
Cut of Meat: Sirloin (top sirloin or sirloin tip) offers great flavor and tenderness for this method. Chuck roast (cut into cubes) is a more economical, marbled alternative that becomes exceptionally tender.
-
No Sear? No Problem: For a true “dump-and-go” recipe, you can skip searing. Simply place the seasoned, raw steak bites in the slow cooker with the sauce. The texture will be slightly different but still delicious.
-
Control the Sweetness: For a less sweet, more savory profile, reduce the honey to ¼ cup. You can always add a drizzle more at the end.
-
Spice it Up: Add ½ – 1 teaspoon of red pepper flakes to the sauce with the garlic, or a few tablespoons of sriracha for a spicy kick.
-
Vegetable Add-Ins: Add 1-inch pieces of bell pepper, thick carrot slices, or small broccoli florets during the last 45-60 minutes of cooking on HIGH to add color and nutrition.
Serving Suggestions
-
Over a Bed of: Steamed jasmine rice, white rice, or cauliflower rice.
-
With: Buttery mashed potatoes, roasted potatoes, or egg noodles.
-
Alongside: Simple steamed vegetables like broccoli or green beans, or a crisp Asian-inspired slaw.
Storage & Reheating
-
Refrigerator: Store cooled steak bites and sauce in an airtight container for up to 3-4 days.
-
Freezer: Freeze in a sealed container for up to 3 months. Thaw overnight in the refrigerator before reheating.
-
Reheat: Gently reheat in a saucepan over medium-low heat, adding a splash of broth or water if needed to loosen the sauce. Microwave in a covered dish, stirring occasionally, also works well.
