The Story Behind the Dish
This Pineapple Chicken and Rice is my answer to the eternal question: “How do I make something exciting without spending all evening in the kitchen?” It’s inspired by the classic sweet-and-sour flavors of Hawaiian huli huli chicken, but simplified into a comforting, one-pan meal. The pineapple doesn’t just add sweetness; its natural enzymes tenderize the chicken, and its juice transforms into a glorious glaze that coats every grain of rice. It’s a burst of sunshine on a plate, any day of the year.
Ingredients
For the Chicken & Marinade:
1.5 lbs (680g) boneless, skinless chicken thighs or breasts, cut into 1-inch chunks
3 tablespoons soy sauce (use tamari for gluten-free)
1 tablespoon brown sugar
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1 tablespoon neutral oil (like avocado or canola)
For the Rice & Sauce:
1 tablespoon neutral oil
1 small yellow onion, finely diced
1 red bell pepper, diced
1 ½ cups (300g) long-grain white rice (jasmine or basmati work perfectly)
2 cups (480ml) low-sodium chicken broth
1 cup (240ml) 100% pineapple juice
⅓ cup (80ml) soy sauce (or tamari)
2 tablespoons rice vinegar
1 tablespoon honey or brown sugar
For the Pineapple & Garnish:
2 cups fresh pineapple chunks (about ½ a medium pineapple)
3 green onions, thinly sliced
1 tablespoon toasted sesame seeds
Fresh cilantro, for serving (optional)

Instructions
Step 1: Marinate the Chicken (15 minutes)
In a medium bowl, combine the chicken chunks with 3 tablespoons soy sauce, 1 tablespoon brown sugar, minced ginger, and minced garlic. Toss until the chicken is evenly coated. Let it marinate at room temperature while you prep the vegetables (about 15 minutes). This quick marinade infuses the chicken with foundational flavor.
Step 2: Sear the Chicken (7-8 minutes)
Heat 1 tablespoon of oil in your large skillet or Dutch oven over medium-high heat.
Using tongs, remove the chicken from the marinade (let excess drip off) and add it to the hot pan in a single layer. Reserve the leftover marinade in the bowl.
Sear the chicken for 2-3 minutes per side, until it develops a beautiful golden-brown crust. The chicken does not need to be cooked through at this stage. Remove it to a clean plate and set aside.
Step 3: Sauté the Aromatics & Toast the Rice (5 minutes)
Reduce the heat to medium. Add another tablespoon of oil to the same pan.
Add the diced onion and bell pepper. Sauté for 3-4 minutes, until they begin to soften.
Add the dry rice to the pan. Stir constantly for 1-2 minutes, allowing the rice to toast slightly and become translucent at the edges. This crucial step adds a nutty depth and helps the grains stay separate.
Step 4: Build the Sauce & Simmer (18-20 minutes)
Pour in the chicken broth, pineapple juice, the remaining ⅓ cup soy sauce, rice vinegar, and honey. Also, add the reserved marinade from the chicken bowl. Stir well to combine, scraping up any browned bits from the bottom of the pan—that’s flavor!
Bring the liquid to a steady simmer. Carefully add the seared chicken and any accumulated juices back into the pan, nestling it into the rice.
Cover the pan tightly with a lid, reduce the heat to low, and simmer for 18-20 minutes. DO NOT PEEK before 18 minutes have passed. The steam is essential for cooking the rice properly.
Step 5: Add Pineapple & Finish (5 minutes)
After 18 minutes, check the rice. It should be tender and the liquid absorbed. If it’s still a bit wet, re-cover and cook for 2-3 more minutes.
Once the rice is cooked, scatter the fresh pineapple chunks over the top. Re-cover the pan, remove it from the heat, and let it sit for 5 minutes. This allows the pineapple to warm through and the flavors to meld beautifully.
Step 6: Garnish & Serve
Fluff the rice and chicken gently with a fork.
Garnish generously with sliced green onions, toasted sesame seeds, and fresh cilantro if using.
Serve immediately directly from the pan for a stunning, family-style presentation.

Don’t Skip the Sear: Searing the chicken creates fond (those browned bits) in the pan, which forms the base of your sauce’s flavor.
Rice Choice Matters: Long-grain rice like jasmine is ideal. Avoid short-grain or risotto rice, as they become too sticky.
