4 large firm-ripe peaches (about 1.5 lbs / 680g) (See Note 1)
1/3 cup (80 ml) pure maple syrup or honey (adjust to taste)
1/4 cup (60 ml) water
1 teaspoon pure vanilla extract or 1 vanilla bean, split and seeds scraped
1 whole cinnamon stick OR 1/4 teaspoon ground cinnamon
2 wide strips of lemon or orange zest (use a vegetable peeler)
1 tablespoon freshly squeezed lemon juice
Pinch of fine sea salt
Optional Add-Ins: 1 star anise pod, 2-3 whole cloves, a slice of fresh ginger, a sprig of fresh thyme or rosemary for a herbal twist.

Instructions
Step 1: Prepare the Peaches
Bring a medium pot of water to a boil. Using a sharp paring knife, score a small “X” on the bottom of each peach. Carefully lower the peaches into the boiling water for 30-45 seconds. Remove them with a slotted spoon and immediately transfer to a bowl of ice water. This process (blanching) loosens the skin. Once cool, the skins should peel off easily starting at the “X.” Discard the skins.
Halve the peeled peaches, remove the pits, and slice them into 1/2-inch thick wedges or chunks. (See Note 2 for peeling alternatives).
Step 2: Stew the Peaches
In the same medium saucepan, combine the maple syrup (or honey), 1/4 cup water, vanilla extract (or seeds and pod), cinnamon stick, citrus zest strips, lemon juice, and pinch of salt. If using any optional spices, add them now.
Heat the mixture over medium heat, stirring occasionally, until it just begins to simmer.
Step 3: Simmer to Perfection
Gently add the prepared peach slices to the simmering syrup. Stir to coat. Reduce the heat to low or medium-low to maintain a gentle, lazy simmer—small bubbles should occasionally break the surface.
Cover the pot and let the peaches stew for 10-15 minutes. Stir gently once or twice during cooking. The peaches are done when they are easily pierced with the tip of a knife but still hold their shape. They should be tender, not mushy. Cooking time will vary based on the ripeness and variety of your peaches.
Step 4: Finish and Serve
Once the peaches are tender, remove the pot from the heat. Using a slotted spoon, carefully transfer the peaches to a serving bowl.
Return the pot with the syrup to the stove. Increase the heat to medium-high and simmer the syrup, uncovered, for 3-5 minutes until it reduces slightly and becomes a bit more viscous.
Pour the warm, reduced syrup over the peaches in the bowl. Discard the cinnamon stick, citrus zest, and any whole spices.
Serve warm, at room temperature, or chilled. These peaches will continue to soften and absorb flavor as they sit.
Chef’s Notes & Variations
Peach Selection & Peeling: Firm-ripe peaches are ideal as they hold their shape. Very ripe peaches will cook faster and become saucier. If you’re short on time or using very ripe fruit, you can skip peeling altogether—the skins will soften during cooking. For a rustic approach, simply wash, slice, and stew with the skins on.
Sweetener Flexibility: Maple syrup and honey are recommended for their flavor, but white sugar, brown sugar, or coconut sugar work perfectly. Start with 1/4 cup and adjust to your taste.
Spice Variations: Feel free to experiment with a cardamom pod, a split vanilla bean instead of extract, or a few black peppercorns for complexity.
Texture: For a thicker syrup, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water. After removing the peaches, whisk this slurry into the simmering syrup and cook for 1-2 minutes until thickened before pouring over the fruit.
Serving Suggestions
Classic Dessert: Serve warm over vanilla ice cream or Greek yogurt, topped with chopped nuts.
