Ingredients
For the Filling:
16 ounces (452g) full-fat cream cheese, softened to room temperature

3/4 cup (90g) powdered sugar, sifted

1 teaspoon pure vanilla extract

1/2 teaspoon finely grated orange zest (optional, but recommended)

1 cup (120g) dried cranberries, chopped

3/4 cup (95g) shelled pistachios, toasted and coarsely chopped (reserve 2 tbsp for garnish)

For the Chocolate Shell & Garnish:
10 ounces (285g) high-quality dark chocolate (60-70% cocoa), finely chopped

2 tablespoons (28g) refined coconut oil

Flaky sea salt (such as Maldon)

Additional whole dried cranberries and pistachios for decorating

Optional: Edible gold dust or festive sprinkles

Equipment:
Parchment paper

Hand mixer or stand mixer

Small offset spatula

Baking sheet

Heatproof bowls

Instant-read thermometer (helpful for tempering)

Instructions
Step 1: Prepare the Filling
Line & Prep: Lay a 12×16 inch sheet of parchment paper on your work surface. In a medium bowl, beat the softened cream cheese with a hand mixer or stand mixer on medium speed until completely smooth and lump-free, about 2 minutes.

Sweeten & Flavor: Add the sifted powdered sugar, vanilla extract, and orange zest (if using). Beat on low speed until the sugar is incorporated, then increase to medium and mix for another 1-2 minutes until light and fluffy. Scrape down the sides of the bowl as needed.

Fold In: Using a spatula, gently fold in the chopped dried cranberries and the chopped pistachios (remember to reserve 2 tablespoons for the final garnish) until evenly distributed.

Step 2: Form the Log
Shape: Scoop the cream cheese mixture onto the center of the parchment paper. Using the spatula and your hands (lightly dampened with water to prevent sticking), form the mixture into a rough 10-inch long log shape, about 2.5-3 inches in diameter.

Roll & Tighten: Use the parchment paper to help you roll and tighten the log into a neater cylinder. Twist the ends of the parchment paper closed like a candy wrapper.

Chill (First Round): Place the parchment-wrapped log on a baking sheet and refrigerate for at least 3 hours, or ideally overnight, until it is very firm.

Step 3: Create the Chocolate Shell
Temper Chocolate (Classic Method): About 15 minutes before the log is done chilling, prepare the chocolate. Chop the chocolate finely. Melt 2/3 of it in a heatproof bowl set over a pot of barely simmering water (double boiler), ensuring the bowl doesn’t touch the water. Stir gently until melted and the temperature reaches 115°F (46°C) on an instant-read thermometer.

Cool & Seed: Remove the bowl from the heat. Immediately add the remaining 1/3 of chopped chocolate and the coconut oil, stirring constantly until completely melted and the mixture cools to 88-90°F (31-32°C). The coconut oil will give a perfect snap and glossy finish.

Quick Method: If not tempering, simply melt the chocolate and coconut oil together in the double boiler or in 20-second bursts in the microwave, stirring between each burst, until smooth. The shell may be slightly softer but will still taste fantastic.

Step 4: Coat and Decorate
Prep & Pour: Remove the firm log from the fridge and unwrap it. Place it on a wire rack set over the baking sheet to catch drips. Pour about 2/3 of the warm chocolate mixture over the log, using the offset spatula to help spread it evenly over the top and sides.

Coat Completely: Quickly lift the rack and tilt the baking sheet, using the spatula to scoop up the pooled chocolate and cover any bare spots. Work swiftly before the chocolate sets.

Immediate Garnish: Immediately sprinkle the log with the reserved chopped pistachios, whole cranberries, and a few pinches of flaky sea salt. If using edible gold dust or sprinkles, apply them now.

Final Chill: Very carefully transfer the entire rack with the coated log to the refrigerator. Let it chill for at least 1 hour, or until the chocolate shell is completely set and hard.

Step 5: Serve & Store
Serve: To serve, place the log on a festive platter. For clean slices, use a sharp knife that has been run under hot water and wiped dry between each cut.

Store: Keep the celebration log stored in an airtight container in the refrigerator for up to 5 days. For best texture and flavor, let it sit at room temperature for 10-15 minutes before serving.

Chef’s Notes & Tips
For a Perfect Slice: For immaculate, crack-free slices, warm your knife under hot running water, dry it quickly, and cut in one smooth, gentle motion.

Nut Variations: Toasted almonds or pecans make excellent substitutes for pistachios.

Flavor Twists: Add a tablespoon of Grand Marnier or Cointreau to the filling for an adult version.

Make-Ahead Marvel: This log can be made up to 2 days in advance, making it a stress-free dessert for entertaining.
