Step-by-Step Instructions
Step 1: Create the Protein Base
In your large mixing bowl, combine the Greek yogurt, chocolate protein powder, and sifted cocoa powder. Use a whisk to mix them together initially—this helps prevent the dry ingredients from flying everywhere. Once roughly combined, add the maple syrup, vanilla extract, and pinch of salt. Using an electric hand mixer on medium speed, beat the mixture for 1-2 minutes until it is completely smooth, thick, and no lumps remain. Set this bowl aside.
Chef’s Tip: Sifting the cocoa powder is crucial! It prevents clumps and ensures a silky-smooth texture in your final mousse.
Step 2: Whip to Perfect Peaks
Pour the cold heavy whipping cream into your medium, clean mixing bowl. Using the clean beaters of your electric mixer, whip the cream on medium-high speed. Whip for 2-4 minutes, watching closely, until it forms stiff peaks. You’ll know it’s ready when you lift the beaters and the cream forms sharp, upright peaks that don’t droop.
Chef’s Tip: For the best results, ensure your cream, bowl, and beaters are very cold. You can chill them in the freezer for 10-15 minutes before starting.
Step 3: Fold & Combine
This step is key for that light, airy texture. Add about one-third of the whipped cream to the chocolate-yogurt base. Using a spatula, gently fold it in. This means cutting down through the center of the mixture, sliding the spatula along the bottom of the bowl, and lifting it up and over the top. Rotate the bowl a quarter turn and repeat. This incorporates air.
Once the first addition is mostly combined, gently fold in the remaining whipped cream in two more batches. Be patient and gentle—you want to retain as much air as possible until the mixture is uniform in color with no white streaks.
Step 4: Chill & Set
Divide the mousse mixture evenly between four serving glasses or ramekins. Smooth the tops with the back of a spoon. Cover lightly with plastic wrap or reusable covers and refrigerate for at least 2 hours, or ideally overnight.
Why It Works: The chilling time allows the flavors to meld beautifully, the protein powder to fully hydrate, and the structure to firm up, giving you the perfect, spoonable mousse texture.
Step 5: Serve & Garnish
Just before serving, add your favorite toppings. A handful of fresh raspberries adds a lovely tart contrast, while shaved dark chocolate and cacao nibs intensify the chocolate experience. A mint leaf adds a fresh, elegant touch.
