The Story Behind the Salad
This recipe was born from a love of simple, contrasting textures. I wanted a side dish that felt both familiar and exciting. The humble carrot, often relegated to a supporting role, takes center stage here. By pairing it with the tropical sweetness of pineapple and the concentrated chewiness of raisins, every forkful is a new experience. The dressing is intentionally light—just a whisper of honey and lime—to enhance the natural flavors without weighing them down. It’s a salad that’s as beautiful to look at as it is delicious to eat, bringing a pop of color and sunshine to any table.
Ingredients
For the Salad:
-
1 lb carrots, peeled
-
1 cup fresh pineapple, finely chopped (see notes for canned option)
-
1/2 cup raisins (golden or regular)
-
1/4 cup fresh cilantro, chopped (optional, but recommended)
-
2 green onions, thinly sliced (white and green parts)
For the Honey-Lime Dressing:
-
3 tbsp extra virgin olive oil
-
1.5 tbsp fresh lime juice (from about 1 lime)
-
1.5 tbsp honey (or maple syrup for vegan option)
-
1/4 tsp ground cumin
-
1/4 tsp salt
-
1/8 tsp black pepper
Instructions
Step 1: Prep the Carrots
There are two ways to get the perfect carrot texture for this salad. Choose your favorite:
-
For a finer texture: Use a box grater or the grater attachment on your food processor. Peel the carrots first, then grate them on the large holes.
-
For a more substantial crunch: Use a julienne peeler or a mandoline with a julienne attachment. This creates carrot “matchsticks” that hold their crunch a bit more. Peel the carrots first, then create your matchsticks.
Place the prepared carrots in a large mixing bowl.
Step 2: Plump the Raisins (Optional but Recommended)
For the ultimate “chewy” raisin experience, place them in a small bowl and cover with hot water. Let them sit for 5-10 minutes while you prepare the rest of the salad. This rehydrates them, making them extra plump and juicy. Drain them well before adding to the salad.
Step 3: Make the Dressing
In a small bowl or a mason jar, combine the extra virgin olive oil, fresh lime juice, honey, ground cumin, salt, and pepper. Whisk vigorously with a fork until the dressing is well emulsified and slightly thickened. If using a mason jar, simply screw on the lid and shake vigorously.
Step 4: Combine the Salad
To the bowl with the carrots, add the chopped pineapple, plumped (and drained) raisins, fresh cilantro (if using), and sliced green onions.
Step 5: Dress and Toss
Pour the dressing over the carrot mixture. Using tongs or two large spoons, toss everything together until all the ingredients are evenly coated in the dressing.
Step 6: Serve or Chill
This salad is delicious both ways. You can serve it immediately for the brightest flavor and crunchiest texture. Alternatively, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together beautifully. If chilling, give it a final toss before serving.
Chef’s Tips & Ingredient Swaps
-
Pineapple: Fresh pineapple is ideal for its firm texture and bright flavor. If using canned, be sure to buy pineapple chunks in 100% juice, not syrup, and drain them very well. Pat them dry with a paper towel to prevent the salad from becoming watery.
-
Make it a Meal: This salad is fantastic on its own, but you can easily turn it into a more substantial dish. Top it with grilled chicken, shrimp, or chickpeas for a light lunch. It’s also delicious with crumbled feta or cotija cheese for a salty contrast.
-
Nutty Addition: For extra crunch and healthy fats, add 1/4 cup of toasted sunflower seeds, sliced almonds, or chopped pecans just before serving.
-
Vegan Option: Simply replace the honey with maple syrup or agave nectar. The salad will be just as delicious.
-
Raisin Variations: Feel free to experiment! Dried cranberries, chopped dried apricots, or even golden berries would be wonderful substitutes for the raisins.
