Ingredients

For the Filling:

  • 1 tablespoon olive oil

  • 1 lb (450g) lean ground beef (90/10 recommended)

  • 1 medium yellow onion, finely diced

  • 1 red bell pepper, finely diced

  • 2 cloves garlic, minced

  • 1 tablespoon tomato paste

  • 1 ½ tablespoons taco seasoning (or blend of: 1 tsp chili powder, 1 tsp cumin, ½ tsp paprika, ½ tsp oregano, ¼ tsp black pepper)

  • ½ teaspoon salt, or to taste

  • ½ cup (120ml) beef broth or water

  • 1 cup (120g) canned black beans, rinsed and drained

  • 1 cup (130g) canned corn kernels, drained

For Assembly & Toppings:

  • 4 large burrito-size flour tortillas (10-inch)

  • 1 cup (115g) shredded Monterey Jack or cheddar cheese

  • 1 large avocado, sliced or diced

  • ½ cup (120g) sour cream or Greek yogurt

  • ½ cup (15g) fresh cilantro, chopped

  • 1 lime, cut into wedges

  • Optional: Diced tomatoes, shredded lettuce, pickled jalapeños, hot sauce.

Instructions

1. Cook the Aromatics & Beef (Time: 10 minutes | Intensity: Medium)

Heat the olive oil in a large skillet or frying pan over medium-high heat. Add the diced onion and bell pepper. Cook, stirring occasionally, for 4-5 minutes until they begin to soften. Add the minced garlic and cook for another 30 seconds until fragrant.

Increase the heat to high and add the ground beef, breaking it up with a wooden spoon. Cook for 5-6 minutes until the beef is fully browned and no pink remains.

2. Season & Simmer (Time: 8 minutes | Intensity: Low)

Reduce the heat to medium. Push the beef mixture to the side and add the tomato paste to the center of the pan. Let it cook for 1 minute to deepen its flavor, then stir it into the beef.

Sprinkle the taco seasoning and salt over the mixture, stirring to coat evenly. Pour in the beef broth and add the black beans and corn. Stir well, bring to a simmer, then reduce heat to low. Let it simmer for 5-7 minutes, stirring occasionally, until the liquid has mostly reduced and the flavors have melded. Taste and adjust seasoning if needed. Remove from heat.

3. Warm the Tortillas (Time: 2 minutes | Intensity: Low)

While the beef simmers, prepare your tortillas. You can warm them one by one in a dry skillet over medium heat for 20-30 seconds per side, or wrap the stack in a damp paper towel and microwave for 30-45 seconds. This makes them pliable and prevents tearing.

4. Assemble the Wraps (Time: 5 minutes | Intensity: Low)

Lay a warm tortilla flat on a clean surface. Spoon a generous quarter of the beef mixture down the center, leaving a 2-inch border at the top and bottom. Top with a handful of shredded cheese, allowing the heat of the filling to begin melting it.

Add your chosen toppings: a few slices of avocado, a dollop of sour cream, and a sprinkle of fresh cilantro.

5. Fold and Serve (Time: 2 minutes | Intensity: Low)

To fold, first fold the left and right sides of the tortilla inward over the filling. Then, starting from the side closest to you, tightly roll the tortilla away from you, tucking the filling in as you go, to form a sealed wrap.

Repeat with remaining tortillas and filling. Serve immediately with lime wedges for squeezing over the top.

Chef’s Notes & Tips for Success

  • Make-Ahead: The beef filling can be made up to 3 days in advance and stored in the fridge. Reheat gently before assembling.

  • Leaner Beef: Using 90/10 or 93/7 lean ground beef prevents excessive grease. If using a higher fat content, drain excess fat after browning.

  • Customize It: This recipe is a canvas! Swap ground beef for ground turkey, chicken, or a plant-based alternative. Add a pinch of cayenne for more heat, or stir in a tablespoon of chipotle in adobo for a smoky kick.

  • Crispy Option: For a crunchier finish, assemble the wraps and toast them seam-side down in a lightly oiled pan over medium heat for 2-3 minutes per side.
