Ingredients

  • ½ cup low-sodium chicken broth or dry red wine

  • 1 teaspoon dried Italian seasoning

  • 1 (17.5-oz) package shelf-stable potato gnocchi

  • 5 oz (about 5 cups) fresh baby spinach

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese, plus more for serving

  • ¼ cup chopped fresh basil or parsley, for garnish

  • Red pepper flakes, for serving (optional)

Instructions

1. Brown the Sausage

Preheat your oven to 400°F (200°C). Heat the olive oil in your large oven-safe skillet over medium-high heat. Add the sausage meat, breaking it up with a wooden spoon into bite-sized chunks. Cook for 6-8 minutes, until well-browned and cooked through. Use a slotted spoon to transfer the sausage to a plate, leaving the rendered fat in the pan.

2. Sauté the Aromatics

Reduce the heat to medium. Add the diced onion to the skillet and cook in the sausage fat for 4-5 minutes, until softened and translucent. Add the minced garlic and cook for 1 more minute, until fragrant.

3. Build the Sauce

Pour the marinara sauce and chicken broth (or wine) into the skillet. Add the dried Italian seasoning. Stir well, scraping up any browned bits from the bottom of the pan—this is flavor! Bring the sauce to a gentle simmer and let it cook for 3-4 minutes to meld the flavors.

4. Assemble the Bake

Remove the skillet from the heat. Stir in the uncooked gnocchi, the browned sausage, and all of the fresh spinach. The spinach will wilt significantly from the heat of the sauce. Gently fold everything together until evenly combined. Smooth the top into an even layer.

5. Add Cheese and Bake

Sprinkle the shredded mozzarella and grated Parmesan evenly over the entire surface. Transfer the skillet to the preheated oven. Bake, uncovered, for 20-25 minutes, until the sauce is bubbling vigorously around the edges and the cheese is melted, golden, and spotty brown in places.

6. Rest and Serve

Carefully remove the skillet from the oven (remember the handle will be extremely hot!). Let the bake rest for 5 minutes; this allows the sauce to thicken slightly and makes it easier to serve. Garnish generously with fresh basil or parsley. Serve hot, with extra Parmesan and red pepper flakes on the side.

  • Sausage: For a lighter version, use Italian turkey sausage. For more texture, use sausage links sliced into rounds instead of crumbled.

  • Vegetable Boost: Add sliced mushrooms or bell peppers when sautéing the onions. Sun-dried tomatoes or roasted red peppers stirred in with the sauce add a wonderful depth.

  • Creamy Twist: For a richer dish, stir in ¼ cup of heavy cream or mascarpone cheese with the marinara sauce.

  • No Oven-Safe Skillet? No problem! Simply transfer the assembled mixture (before adding cheese) to a greased 9×13 inch baking dish, top with cheese, and bake as directed.

  • Make Ahead: Assemble the dish completely (through step 4) up to a day ahead. Cover and refrigerate. Add the cheese just before baking, and you may need to add 5-10 minutes to the baking time if starting from cold.
