Ingredients
For the Lobster Tails:
-
2 (8-10 ounce) cold-water lobster tails, thawed if frozen
-
1 tablespoon olive oil
-
Salt and freshly ground black pepper, to taste
-
1 lemon, halved
For the Garlic Herb Butter:
-
6 tablespoons unsalted butter
-
4 large garlic cloves, finely minced
-
1 tablespoon fresh parsley, finely chopped
-
1 tablespoon fresh chives, finely chopped
-
1 teaspoon fresh thyme leaves
-
½ teaspoon smoked paprika (optional, for color)
-
¼ teaspoon red pepper flakes (optional)
-
Zest of ½ lemon
-
Salt, to taste
Instructions
1. Prepare the Lobster Tails
Using kitchen shears, carefully cut through the top shell of each lobster tail, starting from the open end and cutting all the way to the base of the tail fin. Stop at the tail fin—do not cut through it. Gently spread the shell apart. With your fingers, loosen the meat from the shell, keeping it attached at the base. Carefully lift the meat out and rest it on top of the split shell. This is known as “butterflying.”
Place the prepared tails on a baking sheet or in an oven-safe skillet. Pat them dry with a paper towel. Brush the exposed meat lightly with olive oil and season with a pinch of salt and pepper.
2. Make the Garlic Herb Butter
While the lobster rests, prepare the butter sauce. In a small saucepan over medium-low heat, melt the butter. Add the minced garlic and cook for 1-2 minutes until fragrant but not browned. Remove from heat and stir in the chopped parsley, chives, thyme, lemon zest, smoked paprika (if using), and red pepper flakes (if using). Season with a small pinch of salt. Set aside.
3. Cook the Lobster Tails
Broiler Method (Recommended):
-
Preheat your broiler on high, with the oven rack positioned 6-8 inches from the heat source.
-
Spoon half of the garlic herb butter evenly over the two lobster tails.
-
Broil for 8-10 minutes, or until the meat is opaque, firm to the touch, and the tops are lightly browned. The internal temperature should reach 140°F (60°C).
-
In the final 2 minutes of cooking, squeeze fresh lemon juice from one half over the tails.
Grill Method:
-
Preheat your grill to medium-high (about 400°F / 200°C).
-
Place the tails meat-side down on the grill for 4-5 minutes to get a light char.
-
Flip so the meat is facing up. Spoon the butter over the tails, close the lid, and grill for another 4-6 minutes, basting once, until cooked through.
4. Serve
Immediately transfer the lobster tails to serving plates. Spoon the remaining warmed garlic herb butter from the pan over the top. Serve with the remaining lemon half, cut into wedges, for squeezing.
Chef’s Notes & Tips
-
Thawing: If using frozen lobster tails, thaw them completely in the refrigerator overnight for best results. This preserves texture.
-
Don’t Overcook: This is the cardinal sin of seafood. The meat turns from tender to rubbery in moments. Watch closely and check a minute early.
-
Herb Flexibility: Don’t have fresh chives or thyme? Use 1 teaspoon dried, but fresh parsley is highly recommended. Tarragon is another excellent fresh addition.
-
Presentation: For a dramatic tableside presentation, cook and serve the lobster in a cast-iron skillet.
Serving Suggestions
These luxurious tails are a complete meal alongside simple, complementary sides. Consider:
-
Classic: Creamy mashed potatoes or roasted asparagus to soak up the glorious butter sauce.
-
Lighter: A crisp arugula salad with a lemon vinaigrette.
-
Indulgent: Buttery pasta or crusty, warm bread for dipping.
