The Story Behind the Truffle
Traditional truffles are a sugar bomb. This recipe is an ode to the classic French ganache, but we have swapped the heavy cream for cream cheese and the chocolate for a high-cocoa, sugar-free alternative to create a tangy, sweet, and utterly creamy bite. The sharpness of the lemon cuts through the fat, leaving a clean finish that doesn’t weigh you down.
This is not just a dessert; it is a metabolic hack. By using MCT oil and cream cheese, we provide sustained energy without the insulin spike, making these perfect for a mid-afternoon pick-me-up or a post-dinner treat that won’t ruin your macros.
Ingredients
For the Lemon Ganache Filling
8 oz (226g) Full-fat cream cheese, softened (room temperature)
1/4 cup (56g) Unsalted butter, softened
2 tbsp (30ml) Coconut oil or MCT oil (solid state is fine)
1/2 cup (120ml) Freshly squeezed lemon juice (approx. 2 large lemons)
1 tbsp Lemon zest (packed tightly)
1/2 cup (120ml) Powdered Erythritol or Allulose (confectioner’s style)
1 tsp Vanilla extract
1/4 tsp Xanthan gum (optional, but recommended for binding)
For the Coating (The Shell)
4 oz (113g) 100% Unsweetened baking chocolate, chopped
1 tbsp (15ml) Coconut oil (for sheen)
1/2 tsp Liquid Stevia (to offset the bitterness of the dark chocolate)

Instructions
Phase 1: The Base (Intensity 1 – 20 mins)
Prep the Station: Line a large baking sheet with parchment paper. Clear a shelf in your refrigerator.
Cream the Fats: In your stand mixer fitted with the paddle attachment, beat the cream cheese, butter, and coconut oil on medium speed for 3 to 4 minutes. You want a completely smooth, lump-free mixture. Intensity indicator: The mixture should look like thick whipped frosting.
Add the Zing: Reduce speed to low. Slowly pour in the lemon juice while the mixer is running. The mixture will look like it is curdling—this is normal and is the acid reacting with the dairy. Continue to beat.
Sweeten and Spice: Add the lemon zest, powdered erythritol, and vanilla. Beat for another 2 minutes until the liquid is incorporated.
The Thickener: Sprinkle the Xanthan gum over the mixture (if using) and beat one final minute. The mixture should thicken up quickly. Scrape down the sides of the bowl.
Phase 2: The Chill (Intensity 1 – 30 mins)
Transfer: Pour the mixture into a shallow dish or spread it evenly onto the prepared parchment paper.
Rest: Place the tray in the refrigerator for 30 minutes. Do not skip this step. The mixture needs to harden enough to handle, but it should not freeze solid. It should have the consistency of cold cookie dough—soft but no longer sticky to the touch.
Phase 3: The Roll (Intensity 3 – 15 mins)
Scoop: Remove the chilled mixture from the fridge. Using your small cookie scoop, portion out 1.5 tablespoon-sized balls.
Shape: Roll each portion quickly between the palms of your hands to form a smooth sphere. Time is your enemy here. If your hands warm the mixture, the fat will melt, and the balls will turn into oily puddles. Work in batches of 4 or 5, placing the finished balls back on the parchment-lined tray.
Second Chill: Once all 18 balls are rolled, place the tray in the freezer for 10 minutes (Intensity 2). This hardens the core.
Phase 4: The Shell (Intensity 2 – 15 mins)
Melt the Chocolate: In a double boiler over low heat (or in 20-second bursts in the microwave), melt the unsweetened chocolate, the 1 tbsp of coconut oil, and the liquid stevia. Stir continuously until the mixture is glossy and fluid.
Temper (Quick Method): Remove the chocolate from the heat. Add a small piece of unmelted chocolate to the bowl and stir until melted; this helps stabilize the chocolate so it snaps when you bite into it.
Dip and Shock: Retrieve the firm truffle balls from the freezer. Using a toothpick inserted into the top of a truffle, dip it entirely into the melted chocolate, swirling to coat evenly. Gently tap the toothpick on the rim of the bowl to let the excess drip off.
Set: Place the coated truffle back on the parchment paper. Gently remove the toothpick and use your finger to smooth over the small hole.
Final Freeze: Immediately place the tray of dipped truffles back into the freezer for 5 minutes to snap the shell.
Phase 5: The Finish (5 mins)
Remove from the freezer. Allow the truffles to sit at room temperature for 5 minutes before serving. This brings them from “rock hard” to “creamy center.”
Chef’s Notes
The Lemon Ratio: If you prefer a less tangy truffle, reduce the lemon juice to 1/3 cup and increase the cream cheese by 2 oz.
The Sweetener: Erythritol can recrystallize when cold. If you notice a gritty texture in the filling, you did not beat it long enough. Use Allulose for a smoother, syrupy texture that remains soft even when cold.
The Coating: Do not use chocolate chips for the coating; they contain stabilizers that prevent them from melting smoothly.
Storage & Shelf Life
Store these truffles in an airtight container in the refrigerator for up to 7 days. They can also be frozen for up to 3 months. Do not leave them out at room temperature for more than an hour, as the coconut oil base will soften significantly.
