Method
Step 1: Char the Base
Heat a dry cast-iron skillet or non-stick pan over medium-high heat. Place the 2 tomato halves (cut-side down) and the 2 whole garlic cloves in the pan. Do not add oil. Let them cook undisturbed for 5-7 minutes, until the tomatoes have a deep, blackened char and the garlic is slightly soft and toasted. The goal here is to blister the skin to impart a smoky flavor.
Step 2: Cool and Puree
Remove the charred tomatoes and garlic from the heat. Place them on a cutting board and allow them to cool for about 5 minutes so they don’t melt your blender. Once cooled, transfer them to a food processor or blender. Pulse until they form a coarse paste. Be careful not to over-puree—you want a rustic texture, not a smooth liquid. Set this smoky base aside in a large mixing bowl.
Step 3: The Fresh Dice
While the charred ingredients cool, prepare the fresh elements. Dice the remaining 4 raw Roma tomatoes into ½-inch chunks and add them to the mixing bowl with the puree. Add the finely diced white onion, minced jalapeño (with or without seeds), and the fresh cilantro.
Step 4: Season and Bloom
Add the kosher salt, ground cumin, smoked paprika (if using), and black pepper to the bowl. Pour in the freshly squeezed lime juice. The acidity of the lime does two things: it brightens the flavors and gently “cooks” the raw onion, mellowing its sharp bite.
Step 5: The Combine
Using a large spoon, fold all the ingredients together until they are thoroughly combined. You want a chunky texture where the pieces of tomato and onion remain distinct, but are coated in the smoky red puree.
Step 6: Rest (Crucial Step)
This is the most important step. Cover the bowl with plastic wrap and let the salsa rest at room temperature for at least 30 minutes. This resting period allows the flavors to meld. If you taste it immediately, it will taste like raw vegetables; after 30 minutes, the salt and lime draw out the tomato juices and the cumin blooms, creating a cohesive, complex flavor.
