Instructions
Step 1: Melt the Chocolate

Step 3: Emulsify
With the blender running on low speed, slowly pour the cooled, melted chocolate through the opening in the lid. Blend for an additional 30 seconds to 1 minute until the chocolate is fully incorporated. The color will darken, and the mixture will thicken slightly as it combines.
Step 4: Taste and Adjust (Critical Step)
This is the time to taste your base. It will taste slightly different after chilling, but you want to ensure the sweetness is to your liking. If it is too bitter, add another tablespoon of maple syrup and blend again.
Step 5: Portion and Chill
Divide the mixture evenly among 4 small ramekins, wine glasses, or dessert cups. Tap the containers gently on the counter to remove any air bubbles. Cover with plastic wrap and place in the refrigerator to chill for at least 1 hour. For the best results, chill for 4 hours or overnight to allow the flavors to meld and the mousse to set into a firm, scoopable texture.
Step 6: Serve
Once chilled and firm, remove from the refrigerator. Top with fresh berries and a sprinkle of chocolate shavings. Serve cold.
