Prepare the Vegetables: In a large bowl, combine the zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with 2 tablespoons of olive oil, and sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss well to coat every piece. Set the bowl aside.
Phase 2: Form the Meatballs (Intensity: Medium)
Combine Meatball Ingredients: In a separate large bowl, combine the ground beef, ground pork, breadcrumbs, ½ cup of Parmesan cheese, milk, beaten egg, minced garlic, parsley, oregano, salt, and pepper.
