Intensity Scale (1–5)
Phase Intensity Level Why?
Preparation ⚪⚪⚪⚪⚪ (Level 2) Minimal knife work. The most demanding task is chopping a head of cauliflower and an onion. No complicated butchering or peeling involved.
Cooking Process 🔥🔥 (Level 2) The stove work is simple: sauté, stir, and simmer. However, if you choose to roast the cauliflower first, you will be managing both the oven and the stovetop simultaneously.
Flavor Intensity 🌶️🌶️🌶️🌶️ (Level 4) This is where the recipe shines. The spice blend is robust, warm, and deeply aromatic. The turmeric provides a gentle earthiness, while the ginger offers a subtle zing. It is flavorful without being spicy-hot (heat-wise).
Ingredients
Note: For the best flavor, we highly recommend roasting the cauliflower separately, though a “one-pot” method is provided in the notes.

For the Roasted Cauliflower (Recommended)
1 large head of cauliflower, cut into bite-sized florets

2 tablespoons extra virgin olive oil

½ teaspoon sea salt

½ teaspoon black pepper

For the Stew Base
2 tablespoons coconut oil or avocado oil

1 large yellow onion, finely diced

4 cloves garlic, minced

2 tablespoons fresh ginger, grated (or 1 tbsp dried)

1 tablespoon ground turmeric

1 teaspoon ground cumin

½ teaspoon ground cinnamon

¼ teaspoon cayenne pepper (optional, for heat)

1 (15-ounce) can fire-roasted diced tomatoes

1 (15-ounce) can chickpeas, drained and rinsed

4 cups vegetable broth (low sodium recommended)

1 cup full-fat coconut milk (canned)

2 tablespoons fresh lemon juice

½ cup chopped fresh cilantro, for garnish

Instructions
Phase 1: The Roasting (Preheat Oven to 425°F)
Intensity Level: Oven Management
Time: 20 minutes

Prep the Cauliflower: Place the cauliflower florets on a large baking sheet. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss well to ensure even coating.

Roast: Spread the florets in a single layer. Roast for 18–20 minutes, flipping halfway through, until the edges are golden brown and slightly crispy. Chef’s Tip: Roasting brings out the nutty sweetness of the cauliflower, which is a stark contrast to the savory broth.

Set Aside: Remove from the oven and set aside. You will fold these into the stew at the very end to maintain their texture.

Phase 2: Building the Broth (Stovetop)
Intensity Level: Sauté & Simmer
Time: 25 minutes

Sauté Aromatics: Heat the coconut oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced onion and cook for 5–6 minutes, until soft and translucent. Stir in the garlic and ginger; cook for 1 minute until fragrant.

Bloom the Spices: Add the turmeric, cumin, cinnamon, and cayenne (if using). Stir constantly for 1 minute. Why this matters: “Blooming” the spices in oil unlocks their fat-soluble compounds (like curcumin in turmeric), maximizing their anti-inflammatory potential and flavor.

Deglaze: Pour in the fire-roasted tomatoes (with their juices). Scrape the bottom of the pot to lift any browned bits of spice. Cook for 2 minutes, allowing the tomatoes to reduce slightly.

Simmer: Add the drained chickpeas and the vegetable broth. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 15 minutes. This allows the chickpeas to soak up the spiced broth.

Phase 3: Finishing & Serving
Intensity Level: Assembly
Time: 5 minutes

Creamify: Stir in the coconut milk and fresh lemon juice. Simmer for an additional 2–3 minutes to heat through. Taste the broth and adjust salt and pepper as needed.

Combine: Gently fold in the reserved roasted cauliflower. Warning: Do not stir vigorously, or the cauliflower will break apart. You want distinct, meaty chunks.

Serve: Ladle into bowls. Top generously with fresh cilantro. For a texture contrast, we recommend serving with crusty sourdough bread or fluffy quinoa.

The Grand Finale (Presentation)
To truly elevate this dish, treat the toppings as a “jewel box.” After garnishing with cilantro, add a sprinkle of toasted pumpkin seeds for crunch and a dollop of plain coconut yogurt for extra creaminess. A final crack of black pepper is essential here—it helps your body absorb the curcumin from the turmeric!

Storage & Meal Prep
Fridge: Store in an airtight container for up to 5 days. The flavors intensify overnight.

Freezer: Freeze for up to 3 months (omit the coconut milk if freezing, and stir it in fresh upon reheating).

Reheat: Warm gently on the stovetop over medium-low heat. Add a splash of water or broth if it has thickened too much.
