Instructions
1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the rotini and cook according to package directions until al dente (about 8–10 minutes). Drain and rinse under cold water to stop cooking and cool the pasta quickly. Set aside.

2. Make the Dressing
In a medium bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, celery seed, garlic powder, salt, and pepper until smooth and creamy.

3. Combine the Base
In a large mixing bowl, add the coleslaw mix and the cooled, drained pasta. Pour about ¾ of the dressing over the top. Toss well to coat.
4. Adjust and Add Extras
Add the shredded cheddar cheese (if using) and toss again. Drizzle in the remaining dressing if you prefer a creamier texture. Garnish with fresh parsley or green onions.
5. Chill (Recommended)
For best flavor, cover and refrigerate for at least 30 minutes before serving. This allows the pasta to absorb the dressing and the coleslaw to soften slightly while staying crunchy.
