Ingredients

For the Breadstick Dough:

  • 1 ½ cups (12 oz / 340g) full-fat or low-fat cottage cheese, well-drained

  • 1 ¾ cups (210g) almond flour (see note for substitution)

  • 2 large eggs

  • 2 tsp baking powder

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp dried oregano

  • ½ tsp fine sea salt

  • ¼ tsp black pepper

For the Garlic-Herb Topping:

  • 3 tbsp unsalted butter or olive oil, melted

  • 3 cloves garlic, minced

  • 1 tbsp fresh parsley, finely chopped (or 1 tsp dried)

  • ½ tsp dried oregano

  • Pinch of salt

  • Optional for serving: Grated Parmesan cheese, marinara sauce for dipping, red pepper flakes.

Equipment Needed

  • Food processor or high-powered blender

  • Mixing bowl

  • Parchment paper

  • Baking sheet

  • Pastry brush or spoon

Step-by-Step Instructions

1. Prep & Preheat (5 mins)

Preheat your oven to 400°F (200°C). Line a standard baking sheet with parchment paper. If your cottage cheese is very wet, place it in a fine-mesh strainer for a few minutes and press gently to remove excess liquid.

2. Create the Dough (5 mins)

In the bowl of your food processor, combine the drained cottage cheese, almond flour, eggs, baking powder, garlic powder, onion powder, oregano, salt, and pepper. Process for 30-45 seconds, stopping to scrape down the sides if needed, until a uniform, slightly sticky dough ball forms. The dough will be softer than traditional bread dough.

3. Shape the Breadsticks (5 mins)

Turn the dough out onto the center of your prepared baking sheet. Place a second sheet of parchment paper on top. Using your hands or a rolling pin, press and flatten the dough into a rectangle, roughly 10×7 inches and about ½-inch thick. Remove the top parchment paper. Using a pizza cutter or sharp knife, cut the dough lengthwise into 8-10 even strips. You can gently separate them slightly on the pan for more defined edges.

4. Bake (20-25 mins)

Place the baking sheet in the preheated oven. Bake for 20-25 minutes, or until the breadsticks are puffed, firm to the touch, and golden brown around the edges.

5. Finish with Garlic Butter (2 mins)

While the breadsticks bake, prepare the topping. In a small bowl, combine the melted butter (or oil), minced garlic, parsley, oregano, and a pinch of salt. As soon as the breadsticks come out of the oven, brush the garlic-herb butter generously over the top of each one.

6. Serve & Enjoy!

Let the breadsticks cool on the pan for 2-3 minutes to set. If using, sprinkle with grated Parmesan cheese while still warm. Serve immediately with warm marinara sauce for the ultimate experience!

Chef’s Notes & Success Tips

  • Flour Note: Almond flour is essential for the low-carb structure. For a nut-free version, you can experiment with sunflower seed flour, but note it may react with baking powder and cause a slight green tint (harmless but visual).

  • Cottage Cheese Texture: For the smoothest dough, use small-curd cottage cheese or even blend it completely smooth before adding other ingredients.

  • Flavor Twists: Add ½ cup of shredded mozzarella to the dough for extra chew, or mix in everything bagel seasoning into the garlic butter topping.

  • Storage: These are best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or air fryer for best texture.
