Ingredients

For the Meatloaf:

  • 2 lbs (900g) 93% lean ground turkey (or lean ground beef)

  • 1 cup old-fashioned rolled oats (gluten-free if needed)

  • 1 large egg, lightly beaten

  • 1 medium onion, finely diced

  • 1 medium carrot, finely grated

  • 2 cloves garlic, minced

  • ¾ cup milk (any fat percentage, or unsweetened almond milk)

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon tomato paste

  • 1 teaspoon dried thyme

  • 1 teaspoon smoked paprika

  • ¾ teaspoon salt

  • ½ teaspoon freshly ground black pepper

For the Glaze:

  • ⅓ cup ketchup (look for a low-sugar variety if desired)

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon pure maple syrup or honey

Equipment

  • 9×5 inch loaf pan

Instructions

Step 1: Prep & Preheat (10 minutes)

Preheat your oven to 375°F (190°C). Lightly grease your 9×5 inch loaf pan with olive oil or cooking spray. Prepare your vegetables: finely dice the onion, grate the carrot, and mince the garlic. In a small bowl, whisk together all the glaze ingredients until smooth. Set aside.

Step 2: Combine the Meat Mixture (10 minutes)

In a large mixing bowl, add the rolled oats and milk. Let them sit for 5 minutes to allow the oats to soften. This is the secret to a tender, non-dry meatloaf. To the oat mixture, add the beaten egg, diced onion, grated carrot, garlic, Worcestershire sauce, tomato paste, thyme, smoked paprika, salt, and pepper. Mix thoroughly with a fork until well combined.

Add the ground turkey to the bowl. Using clean hands or a spatula, gently mix everything together until the vegetables and oats are evenly distributed throughout the meat. Be careful not to overmix, as this can make the loaf tough.

Step 3: Shape & Glaze

Transfer the meat mixture to the prepared loaf pan. Press it down evenly and smooth out the top with a spatula. Place the pan on a baking sheet (to catch any potential drips). Apply half of the glaze evenly over the top of the unbaked meatloaf.

Step 4: Bake (60 minutes)

Bake in the preheated oven for 45 minutes. Carefully remove the meatloaf and spread the remaining glaze over the top. Return it to the oven and bake for an additional 15-20 minutes. The meatloaf is done when the internal temperature in the thickest part reaches 165°F (74°C) on an instant-read thermometer.

Step 5: Rest & Serve (CRUCIAL – 10 minutes)

Once cooked, remove the meatloaf from the oven and let it rest in the pan for at least 10 minutes. This allows the juices to redistribute, ensuring clean, moist slices that won’t fall apart. Gently run a knife around the edges, then carefully lift the loaf out onto a cutting board using two spatulas, or slice and serve directly from the pan.


Storage & Reheating Instructions

  • Refrigerator: Allow the meatloaf to cool completely. Store in an airtight container for 4-5 days.

  • Freezer: Wrap the whole loaf or individual slices tightly in plastic wrap and then in foil. Place in a freezer bag. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

  • Reheating: For best results, reheat slices in a covered oven-safe dish at 325°F (160°C) for 15-20 minutes, or until warmed through. You can also microwave single slices on a plate for 60-90 seconds.
