Step-by-Step Instructions
Step 1: Prepare & Sear the Chicken
Pat the chicken breasts completely dry with paper towels. This is crucial for a good sear. In a small bowl, combine the salt, pepper, garlic powder, and smoked paprika. Sprinkle the seasoning blend evenly over both sides of each chicken breast.
Heat the olive oil and butter in your large skillet over medium-high heat. Once the butter has melted and the pan is hot, add the chicken breasts. Sear for 5-6 minutes per side, until deeply golden brown. The chicken will not be cooked through at this point. Transfer the chicken to a clean plate and set aside. Reduce the heat to medium.
Step 2: Build the Flavor Base
In the same skillet, add the chopped bacon. Cook for 5-7 minutes, stirring occasionally, until crispy. Use a slotted spoon to remove the bacon to a paper towel-lined plate, leaving the rendered fat in the pan.
Add the sliced mushrooms and diced onion to the bacon fat. Cook for 6-8 minutes, stirring occasionally, until the onions are soft and translucent and the mushrooms have released their moisture and browned.
Step 3: Create the Creamy Sauce
Stir in the minced garlic and cook for 1 minute until fragrant. Sprinkle the flour over the mushroom and onion mixture. Cook, stirring constantly, for 2 minutes to cook out the raw flour taste. This is your roux, the foundation for your sauce.
Gradually pour in the chicken broth while whisking or stirring vigorously to prevent any lumps from forming. Scrape up any browned bits (fond) from the bottom of the pan—this is pure flavor! Bring to a gentle simmer and let it thicken for 2-3 minutes.
Stir in the heavy cream, Dijon mustard, and dried thyme. Return to a simmer and cook for 3-4 minutes, allowing the sauce to thicken further and the flavors to meld. Season the sauce with salt and pepper to taste.
Step 4: Smother and Simmer
Add the fresh spinach to the sauce in handfuls, wilting each batch before adding the next. This will take about 2-3 minutes total. Stir in half of the crispy bacon and the grated Parmesan cheese until the cheese is melted and the sauce is smooth.
Nestle the seared chicken breasts and any accumulated juices back into the skillet, submerging them in the creamy spinach and mushroom sauce. Reduce the heat to low, cover the skillet with a lid, and let it simmer gently for 12-15 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F / 74°C).
Step 5: Serve
Remove the skillet from the heat. Spoon plenty of the creamed spinach and mushroom sauce over each chicken breast. Garnish generously with the remaining crispy bacon and a sprinkle of fresh parsley.
Serving Suggestions & Pairings
-
For Soaking Up the Sauce: Serve over a bed of creamy mashed potatoes, buttered egg noodles, steamed white rice, or cauliflower rice for a low-carb option.
-
For a Vegetable Side: Roasted asparagus, green beans almondine, or a simple garden salad with a bright vinaigrette to cut through the richness.
-
Wine Pairing: A buttery Chardonnay, a smooth Pinot Noir, or a crisp Sauvignon Blanc would complement the dish beautifully.
