Why This Recipe Works

Ingredients
4-6 bone-in, thick-cut pork chops (about 1 to 1.5 inches thick, 2-3 lbs total)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
½ teaspoon smoked paprika (optional, for depth)
2 tablespoons olive oil or avocado oil, divided
1 large yellow onion, thinly sliced
8 ounces cremini mushrooms, sliced
4 cloves garlic, minced
1 cup low-sodium chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme (or 1 tablespoon fresh)
For the Slurry (to thicken):
¼ cup cold water
2 tablespoons cornstarch (or all-purpose flour)

Instructions
1. Prep the Pork
Pat the pork chops completely dry with paper towels. This is crucial for achieving a good sear. In a small bowl, combine the salt, pepper, garlic powder, and smoked paprika. Rub the spice mixture evenly over all sides of the pork chops.
2. Sear the Meat
Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat (Intensity Level: Medium-High). Once the oil is shimmering, carefully place the pork chops in the pan in a single layer (you may need to do this in two batches). Sear for 3-4 minutes per side, until a deep golden-brown crust forms. Don’t move them around while searing; let them develop that crust. Transfer the seared chops to the slow cooker, placing them in a single layer at the bottom.
3. Sauté the Aromatics
Reduce the skillet heat to medium (Intensity Level: Medium). Add the remaining 1 tablespoon of oil to the skillet. Add the sliced onions and cook for 4-5 minutes, scraping up the browned bits from the bottom of the pan (this is flavor!). Add the sliced mushrooms and cook for another 5-7 minutes, until they release their liquid and start to brown. Stir in the minced garlic and cook for 1 minute until fragrant.
4. Deglaze and Build the Gravy
Pour the chicken broth and Worcestershire sauce into the skillet. Add the dried thyme. Stir well, using a wooden spoon to loosen any remaining browned bits from the pan. Bring the mixture to a simmer and let it cook for 1-2 minutes. Pour this entire onion-mushroom mixture over the pork chops in the slow cooker.
5. Slow Cook
Place the lid on the slow cooker. Cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The pork chops are done when they are fork-tender.
6. Thicken the Gravy
Once the cooking time is complete, carefully transfer the pork chops to a clean platter and tent them loosely with foil to keep warm. In a small bowl, whisk together the cold water and cornstarch until smooth. Turn the slow cooker to HIGH (if it isn’t already) and pour the cornstarch slurry into the liquid in the pot, stirring constantly. Let the gravy cook for 10-15 minutes, uncovered, until it has thickened to your liking. Taste and adjust seasoning with salt and pepper if needed.
7. Serve
Return the pork chops to the slow cooker to warm them in the gravy, or spoon the gravy directly over the chops on the platter. Garnish with fresh parsley and serve hot.
