Ingredients

  • Weet-Bix biscuits, crushed into fine crumbs (about 1 cup of crumbs)

  • 1 cup (100g) desiccated coconut, plus extra ½ cup for rolling

  • ⅓ cup (40g) cocoa powder, preferably Dutch-processed for a richer flavour

  • 1 ½ teaspoons peppermint extract (not mint essence, for a fresher flavour)

  • ⅓ cup (115g) honey or maple syrup for a vegan option

  • ⅓ cup (85g) smooth nut butter (almond, cashew, or peanut butter all work well)

  • 2 tablespoons coconut oil, melted

  • 2 tablespoons chia seeds or flax seeds (optional, for an extra nutrient boost)

  • A pinch of sea salt

For the Optional Chocolate Drizzle:

  • ¼ cup (45g) dark chocolate chips

  • ½ teaspoon coconut oil

Instructions

Step 1: Prepare the Base

Line a baking tray or plate with parchment paper. Set aside.

Step 2: Combine Wet Ingredients

In a small saucepan over low heat, gently warm the honey (or maple syrup) and nut butter together, stirring constantly until they become runny and easily combined. This should only take 1-2 minutes. Do not let it boil.
Remove from heat and stir in the melted coconut oil, peppermint extract, and pinch of sea salt.

Step 3: Bring the Mixture Together
