Ingredients

For the Meatloaf:

  • 1 ½ lbs (680g) ground beef (80/20 blend recommended for moisture)

  • 6 strips bacon, cooked until crisp and crumbled (reserve 1 tbsp grease)

  • 1 cup shredded sharp cheddar cheese

  • ½ cup finely diced yellow onion

  • 2 cloves garlic, minced

  • 1 large egg

  • ¼ cup almond flour (or crushed pork rinds for nut-free)

  • 2 tbsp sugar-free ketchup

  • 1 tbsp yellow mustard

  • 1 tsp smoked paprika

  • 1 tsp dried parsley

  • ½ tsp salt

  • ¼ tsp black pepper

For the Burger Sauce Topping:

  • ¼ cup mayonnaise

  • 2 tbsp sugar-free ketchup

  • 1 tbsp dill pickle relish (sugar-free)

  • ½ tsp white vinegar

  • Pinch of onion powder

For Garnish (Optional):

  • 2 tbsp chopped pickles

  • 1 tbsp chopped fresh parsley

  • 2 strips of cooked bacon, crumbled

Instructions

1. Prep and Preheat.
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup. In a large mixing bowl, add the ground beef.

2. Cook the Bacon & Onion.
In a skillet over medium heat, cook the 6 strips of bacon until crisp. Remove to a paper towel-lined plate. Once cool, crumble into small pieces. Pour off all but 1 tablespoon of the bacon grease. Add the diced onion to the skillet and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 more minute until fragrant. Remove from heat and let cool slightly.

3. Combine the Meatloaf Mixture.
To the bowl with the ground beef, add the crumbled bacon, cooked onion and garlic, shredded cheddar, almond flour, egg, 2 tbsp ketchup, mustard, smoked paprika, parsley, salt, and pepper. Using your hands, mix thoroughly until all ingredients are evenly incorporated. Avoid overmixing.

4. Shape and Bake.
Transfer the meat mixture to the prepared baking sheet. Shape it into a firm, even loaf, approximately 9×5 inches.

5. Prepare the Sauce & Bake.
In a small bowl, whisk together all the Burger Sauce Topping ingredients: mayonnaise, ketchup, relish, vinegar, and onion powder. Spread this sauce evenly over the top and sides of the meatloaf.

6. Bake.
Place the meatloaf in the preheated oven and bake for 50-55 minutes, or until the internal temperature reaches 160°F (71°C). The top should be glossy and slightly caramelized.

7. Rest and Serve.
Remove the meatloaf from the oven and let it rest for 10 minutes. This crucial step allows the juices to redistribute, ensuring a moist slice that holds together. Garnish with extra crumbled bacon, chopped pickles, and parsley if desired. Slice with a sharp knife and serve.

Tips & Variations

  • Don’t Skip the Rest: Resting is non-negotiable for a perfect slice.

  • Testing Doneness: A meat thermometer is your best friend. 160°F (71°C) is the target.

  • Pan Options: While a baking sheet creates more surface area for the delicious sauce to glaze, you can also use a standard loaf pan. Lightly grease it first.

  • Cheese Variations: Swap cheddar for pepper jack, gouda, or Swiss for a different flavor profile.

  • Add Veggies: Fold in ½ cup of finely chopped mushrooms or spinach for an extra nutrient boost.

Storage & Reheating:
Store leftover meatloaf in an airtight container in the refrigerator for up to 4 days. For longer storage, wrap slices tightly and freeze for up to 3 months. Thaw in the refrigerator overnight. Reheat individual slices in the microwave for 60-90 seconds or in a 350°F (175°C) oven for 10-15 minutes until warmed through.
