Ingredients
For the Filling:
-
1 tbsp olive oil
-
1/2 lb ground beef (85/15 or 90/10)
-
1 tbsp taco seasoning (store-bought or homemade)
-
1/3 cup water
-
1/2 cup refried beans (canned or homemade)
-
2 (6-inch) corn tostada shells
-
1 cup shredded Mexican blend cheese, divided
For Assembly & Toppings:
-
2 extra-large (12-inch) burrito-size flour tortillas
-
1/2 cup sour cream or Mexican crema
-
1 cup shredded iceberg lettuce
-
1 roma tomato, diced
-
Optional: Diced onion, jalapeños, hot sauce, or guacamole
Equipment
-
Large skillet
-
Spatula
-
Griddle or large non-stick pan
-
Aluminum foil (for holding, optional)
Instructions
1. Prepare the Filling
Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess grease. Stir in the taco seasoning and water. Reduce heat to medium and simmer for 3-4 minutes until the liquid is mostly absorbed. Remove from heat. In a separate small bowl, microwave the refried beans for 30-60 seconds until warm and spreadable.
2. Assemble the Crunch Wraps
This is the key step! Lay one extra-large flour tortilla on a clean surface. Spread a generous layer of warm refried beans (about 1/4 cup) in a circle in the exact center of the tortilla, leaving a 3-inch border all around.
-
Layer 1: Spoon half of the seasoned beef mixture over the beans.
-
Layer 2: Place one crispy corn tostada shell directly on top of the beef.
-
Layer 3: Spread half of the sour cream over the tostada shell.
-
Layer 4: Sprinkle a handful of shredded cheese over the sour cream.
-
Layer 5: Top with shredded lettuce and diced tomato.
3. The Fold (Secrets to Success!)
Gently fold the bare edges of the tortilla up and over the center mound of ingredients. Start with one fold, then continue to work your way around, creating a hexagon (6-sided) shape. The tortilla should completely enclose the filling, with a flat top. The weight of the fillings will hold it together. If there’s a small open spot in the center, cut a 3-inch circle from a second flour tortilla and place it over the gap before flipping. Repeat for the second Crunch Wrap.
4. Cook to Crispy Perfection
Heat a griddle or large non-stick pan over medium heat. No oil is needed. Carefully place one folded Crunch Wrap, seam-side down, onto the hot surface. Cook for 3-4 minutes, until golden brown and crispy. Using a sturdy spatula, carefully flip it over. Cook for another 3-4 minutes on the second side until equally golden and crispy, and the cheese inside is fully melted. Repeat with the second Crunch Wrap.
5. Serve
Remove from the pan and let rest for 1-2 minutes before cutting in half (this allows the fillings to set slightly). Serve immediately with hot sauce, salsa, or extra sour cream on the side.
Chef’s Notes & Tips
-
Tortilla是关键 (The Tortilla is Key): The large 12-inch burrito tortillas are essential for a proper fold. Warming them for 10 seconds in the microwave can make them more pliable and less likely to tear.
-
Keep it Crispy: For the best texture, assemble and cook just before serving. The tostada shell can soften if it sits too long with the wet ingredients before cooking.
-
Customize It: Make it vegetarian by using plant-based ground “beef” or seasoned lentils. Swap the beef for seasoned ground chicken or turkey. Add a layer of guacamole under the tostada shell for extra creaminess.
-
Make-Ahead: You can prepare the beef filling and chop the veggies ahead of time. Assemble and cook when ready to eat for the ultimate experience.
