Instructions
1. Melt the Chocolate (5 minutes)
This step requires gentle heat to prevent the chocolate from seizing.

Stovetop Method (Bain-Marie): Fill the saucepan with about an inch of water and bring to a simmer. Place the heatproof bowl with the chocolate pieces on top, ensuring the bottom of the bowl does not touch the water. Stir continuously until the chocolate is completely melted and smooth. Remove from heat and let cool slightly.

Microwave Method: Place chocolate in a microwave-safe bowl. Heat in 20-second bursts, stirring thoroughly between each burst, until completely melted and smooth. Let cool slightly.
2. Blend to Perfection (5 minutes)
This is where the magic happens. The blending creates the silky-smooth mousse texture.

Place the cottage cheese in the food processor or blender. Process for 30-60 seconds until it is completely smooth, with no visible curds. Scrape down the sides as needed.

With the processor or blender running on low, slowly pour in the slightly cooled, melted chocolate through the feed tube.

Once all chocolate is added, stop, scrape down the sides, and blend again for another 30-60 seconds until the mixture is homogenous, glossy, and perfectly smooth.
3. Chill and Set (1 hour minimum)
Chilling is non-negotiable for the perfect mousse texture.

Using a spatula, divide the mousse mixture evenly between your four serving glasses or ramekins.

Smooth the tops with the back of a spoon.

Cover lightly with plastic wrap or reusable covers and refrigerate for at least 1 hour, or until firmly set. For best results, chill for 2-3 hours or overnight.
4. Serve and Enjoy

Just before serving, add your chosen garnishes. A few fresh raspberries, a light sprinkle of flaky sea salt, or some chocolate shavings elevate the dessert beautifully.

Cottage Cheese Note: Full-fat cottage cheese yields the richest, creamiest result. Low-fat works well but may result in a slightly less lush texture. Do not use fat-free, as it can make the mousse grainy.
