1 tablespoon fresh chives, finely chopped
-
1 teaspoon fresh lemon juice
-
¼ teaspoon salt
-
⅛ teaspoon freshly ground black pepper
Equipment

Sharp kitchen shears or sturdy chef’s knife
-
Mixing bowl
-
Baking sheet or oven-safe dish
-
Parchment paper (optional, for easy cleanup)
-
Small saucepan or microwave-safe bowl

Basting brush
Instructions
1. Prepare the Garlic Herb Butter (Can be done ahead):
In a mixing bowl, combine the softened butter, minced garlic, chopped parsley, chives, lemon juice, salt, and pepper. Mix vigorously with a fork or spoon until all ingredients are fully incorporated and the butter is fluffy. For deeper flavor, cover and let it sit at room temperature for 30 minutes, or refrigerate for up to 3 days. Bring to a soft, spreadable consistency before using.
2. Prep the Lobster Tails:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Using kitchen shears, carefully cut down the center top of the lobster shell, starting from the fleshy meat end and cutting all the way to the base of the tail fin, but do not cut through the bottom shell or the tail fan.
Gently pry the shell open with your fingers. Lift the lobster meat through the slit, loosening it from the shell, and rest it on top of the split shell. (This is known as the “butterflied” method). Pat the meat dry with a paper towel.
3. Season and Butter:
Place the prepared tails on the baking sheet. Brush the exposed meat lightly with olive oil. Season with a pinch of salt, pepper, and a dusting of paprika.
Divide the garlic herb butter in half. Spoon one portion generously over the top of each lobster tail, allowing some to drip down into the shell.
4. Bake to Perfection:
Transfer the baking sheet to the preheated oven. Bake for 12-15 minutes, depending on the size of the tails. The lobster is done when the meat is opaque, white, and firm to the touch, registering an internal temperature of 140°F (60°C). The shells will be bright red. Do not overcook, as the meat will become tough and rubbery.
5. Broil (Optional for Color):
For a beautiful golden-brown top, switch the oven to broil for the final 1-2 minutes of cooking. Watch closely to prevent burning.
6. Serve Immediately:
Remove the lobster tails from the oven. Spoon any melted butter from the pan back over the meat. Garnish with a sprinkle of fresh parsley and serve immediately with lemon wedges on the side. Provide shell crackers and seafood forks for easy eating.
Chef’s Notes & Tips for Success
-
Thawing Frozen Tails: For best results, thaw frozen lobster tails overnight in the refrigerator in a sealed container.
-
Butterfly Technique: For easier cutting, use sharp shears and insert the tip just under the shell at the top of the meat to start your cut. If the meat is stubborn, run a knife gently underneath to release it before lifting.
-
Avoiding Overcooking: This is the most critical step. Use a meat thermometer for precision. The meat will continue to cook slightly after removal from the oven (carryover cooking).
-
Butter Variations: Add a pinch of red pepper flakes to the butter for a subtle heat, or a teaspoon of grated Parmesan for a nutty finish.
-
Serving Suggestions: This dish pairs magnificently with simple sides that won’t compete for attention: creamy risotto, steamed asparagus, a crisp green salad, or crusty bread for soaking up the incredible garlic butter sauce.
