This hearty, rustic dish, hailing from the Swabia and Baden regions, is a traditional companion to the season’s first Federweißer (new wine). More than a quiche and richer than a tart, Zwiebelkuchen is a celebration of humble ingredients transformed into sublime comfort food. The slow-cooked onions melt into a sweet, golden tangle, enveloped in a creamy, caraway-scented custard, all nestled within a tender, yeasty dough. It’s perfect for a cozy dinner, a festive gathering, or a slice of edible tradition.
Ingredients
For the Dough (Hefeteig):
250g (2 cups) all-purpose flour, plus extra for dusting
1 tsp (7g) active dry yeast
1 tsp sugar
120ml (½ cup) lukewarm whole milk
30g (2 tbsp) unsalted butter, softened
1 large egg yolk
½ tsp salt
For the Filling:
1 kg (about 4 large) yellow onions, thinly sliced
150g (about 5 slices) thick-cut bacon, finely diced (optional; omit for vegetarian version)
200g (¾ cup) sour cream
200g (¾ cup) crème fraîche or full-fat Greek yogurt
3 large eggs
2 tbsp all-purpose flour
1½ tsp salt, plus more to taste
½ tsp freshly ground black pepper
1½ tbsp caraway seeds, plus extra for sprinkling
1 tbsp vegetable oil or butter for sautéing
Instructions
Step 1: Prepare the Yeast Dough
In a small bowl, dissolve the sugar in the lukewarm milk. Sprinkle the yeast over the surface, stir gently, and let it stand for 10-15 minutes until frothy.
In a large mixing bowl or the bowl of a stand mixer fitted with a dough hook, combine the flour and salt. Make a well in the center and add the foamy yeast mixture, softened butter, and egg yolk.
Mix until a shaggy dough forms. Knead for 8-10 minutes by machine or 10-12 minutes by hand on a lightly floured surface until the dough is smooth, elastic, and slightly tacky.
Shape the dough into a ball, place it in a lightly oiled bowl, and cover with a damp kitchen towel or plastic wrap. Let it rise in a warm, draft-free place for 1 hour, or until doubled in size.
Step 2: Caramelize the Onions & Prep the Filling
While the dough rises, heat the oil or butter in a large, heavy-bottomed skillet or Dutch oven over medium heat. Add the diced bacon (if using) and cook until crisp. Remove with a slotted spoon, leaving the fat in the pan.
Add all the sliced onions to the pan. Cook over medium-low heat, stirring occasionally, for 25-30 minutes. Do not rush this step. The onions should become deeply golden, soft, and sweet, with their moisture fully evaporated. Stir in the caraway seeds during the last 5 minutes. Season with salt and pepper. Set aside to cool slightly.
In a separate bowl, whisk together the sour cream, crème fraîche, eggs, 2 tablespoons of flour, salt, and pepper until perfectly smooth.
Step 3: Assemble the Pie
Preheat your oven to 200°C (400°F). Grease a 26cm (10-inch) springform pan or deep tart pan.
Punch down the risen dough. On a lightly floured surface, roll it out into a circle about 5cm (2 inches) larger than your pan.
Carefully transfer the dough to the pan, gently pressing it into the bottom and up the sides to form an even crust with a slight lip.
Spread the cooled onion (and bacon) mixture evenly over the dough base. Pour the creamy custard mixture over the onions, ensuring it seeps into all the gaps. Sprinkle the top with an extra pinch of caraway seeds.
Step 4: Bake to Golden Perfection
Place the pie on the center rack of the preheated oven. Bake for 40-50 minutes. The pie is done when the custard is fully set (with only the faintest jiggle in the center), the crust is a deep golden brown, and the top is beautifully speckled with darker golden spots.
Remove from the oven and let it cool in the pan on a wire rack for at least 20-30 minutes before slicing. This resting time is crucial for the filling to set completely.
